Ingredients

  • 2 ripe avocados, peeled and pitted
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons fresh lime juice
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup crumbled feta cheese or toasted pine nuts for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.
  2. In a medium bowl, combine avocados, lime juice, olive oil, garlic, salt, and pepper. Mash or blend into a smooth dressing.
  3. In a large bowl, mix pasta, cucumber, cherry tomatoes, red onion, and cilantro. Pour dressing over and toss gently to coat.
  4. Taste and adjust seasoning with salt, pepper, or lime juice. Sprinkle feta or pine nuts before serving if desired.
  5. Chill the salad for at least 20 minutes to meld flavors and enhance texture before serving.
