- 8 ounces fusilli or rotini pasta
- 2 ripe avocados, peeled and pitted
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro or parsley, chopped
- 2 cloves garlic, minced
- 3 tablespoons fresh lime juice
- 3 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- Optional: 1/4 cup crumbled feta cheese or toasted pine nuts for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.
- In a medium bowl, combine avocados, lime juice, olive oil, garlic, salt, and pepper. Mash or blend into a smooth dressing.
- In a large bowl, mix pasta, cucumber, cherry tomatoes, red onion, and cilantro. Pour dressing over and toss gently to coat.
- Taste and adjust seasoning with salt, pepper, or lime juice. Sprinkle feta or pine nuts before serving if desired.
- Chill the salad for at least 20 minutes to meld flavors and enhance texture before serving.
