- 6 cups mixed Romaine and iceberg lettuce, chopped
- 2 cups cooked chicken breast, diced or shredded
- 4 slices crispy bacon, crumbled
- 1 ripe avocado, peeled, pitted, and diced
- 2 hard-boiled eggs, peeled and chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled blue cheese
- 1/4 cup finely chopped green onions or chives
- Salt and freshly ground black pepper, to taste
- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 cup extra virgin olive oil
- 1 clove garlic, minced

Instructions
- Prepare all ingredients. Cook chicken breast by grilling or pan-searing until golden brown and juicy.
- Cook bacon slices in a skillet over medium heat until crisp. Drain on paper towels and crumble once cool.
- Hard boil eggs for 10 minutes, then cool in iced water. Peel and chop.
- In a large bowl, combine chopped lettuce, diced avocado, cherry tomatoes, green onions, and crumbled blue cheese.
- Add cooked chicken, bacon, and chopped eggs to the bowl and mix evenly.
- Whisk together red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Slowly whisk in olive oil to form a smooth vinaigrette.
- Pour dressing over salad before serving and toss gently to coat all ingredients.
- Adjust seasoning with salt and pepper if needed. Serve immediately.
