Ingredients

  • 2 hard-boiled eggs, peeled and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese
  • 1/4 cup finely chopped green onions or chives
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic, minced

Instructions

  1. Prepare all ingredients. Cook chicken breast by grilling or pan-searing until golden brown and juicy.
  2. Cook bacon slices in a skillet over medium heat until crisp. Drain on paper towels and crumble once cool.
  3. Hard boil eggs for 10 minutes, then cool in iced water. Peel and chop.
  4. In a large bowl, combine chopped lettuce, diced avocado, cherry tomatoes, green onions, and crumbled blue cheese.
  5. Add cooked chicken, bacon, and chopped eggs to the bowl and mix evenly.
  6. Whisk together red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Slowly whisk in olive oil to form a smooth vinaigrette.
  7. Pour dressing over salad before serving and toss gently to coat all ingredients.
  8. Adjust seasoning with salt and pepper if needed. Serve immediately.
